It’s carefully selected germinated black rice, glutinous rice and high-quality Korean Black rice enriches the taste. Furthermore, water content is adjusted to provide the optimal edibility with high-pressure high-temperature cooking.

With a long history and relationship with rice, translating to “Ssal” in Korean, rice, once cooked, becomes “Bap”. With a much deeper meaning than just “cooked rice”, Bap encompasses a more emotion-filled word that recollects life and is often used for referring to an entire “meal”. Black rice has the highest overall antioxidant capacity and activity. In fact, in addition to anthocyanin, black rice has been found to contain over 23 plant compounds with antioxidant properties, including several types of flavonoid and carotenoids.

Creamy Black Rice Pudding

  • 1 pack OTOKI Cooked Black Rice
  • 2 cups milk divided
  •  cup sugar
  • pinch salt
  • 1 egg
  •  cup raisins
  • 1 tablespoon butter
  • ½ teaspoon vanilla
  • cinnamon
  • nutmeg

  1. Mix OTOKI Cooked Black Rice, 1 ½ cups milk, sugar and salt. Cook uncovered over medium heat for about 15-20 minutes.
  2. Whisk egg and remaining milk in a bowl.  Add about 1 cup of the hot rice mixture to the egg while stirring.
  3. Stir the egg mixture and raisins into the rice. Cook 2 minutes more.
  4. Remove from heat and stir in butter and vanilla.
  5. Serve warm and garnish with whipped cream and a sprinkle of nutmeg and cinnamon.
